Yum Pla Dook Foo, Thai crispy catfish and green mango salad

Every now and then, I received in my e-mail several invitations to enroll on teaching degree online or enroll in cooking school and begin a journey to an education that I can savor.

Because I don’t have time to attend culinary trainings, I contented myself on discovering world cuisines from the internet. I’m looking forward to prepare in my own kitchen Yum Pla Dook Foo, Thai crispy catfish and green mango salad. I love it since our friends introduced this Thai dish last Thursday night .

Yum Pla dook foo is a quick salad appetizer, but is meaty enough to be a main course. It plays all the core flavors of Thai food against one another; sweet, sour, salty, nutty and spicy hot. It’s very very Thai.

Here’s an easy recipe I found at ThaiTable.com

Ingredients for 2 Servings:

  • 1/3 cup vegetable oil
  • 3-5 Thai chili pepper, minced
  • 1 teaspoon sugar
  • 2 shallots, thinly sliced
  • 1 lime
  • 1/3 cup green mango
  • 2 tablespoons fish sauce
  • 1/2 lb catfish
  • 1/4 cup cashew or nuts (Optional)
Tips and substitutions
1/2 lb of catfish is about 1 fillet.
There are two ways of frying the cat fish.
  1. The traditional way is to place the catfish fillet on a cutting board and, using 2 forks, break up the fish into very small pieces. Heat up the oil in a wok or skillet on medium low heat and deep fry the fish until golden brown.
  2. ThaiTable.com recommends that instead of the traditional method, you bake it first and then drain the juices and then fry the whole fillet on medium low heat. As you are frying the fillet, break it up with your spatula into very small pieces.
  • It takes a few minutes to brown all the pieces to be very crispy. Drain the cooked fish on paper towel.
  • Mince the chilli pepper. Mix the minced chili pepper, sugar, fish sauce and lime juice together.
  • Slice the shallot thinly.
  • Peel and grate mango with a large hole grater. In Thailand, as in the pictures, people sliver the mango by first chopping along the length of the mango many many times so that the blade goes just a little below the surface and then cutting the thin pieces away.
  • If your cashews are uncooked, toast them in a pan until golden brown.
  • Mix all ingredients together and serve.
Our friends invited us for dinner last Thursday night in Sugar Rock at Thamanoonvithi Road. I used to live in this road 4 years ago and used to pass this restaurant but I never get the chance to dine in here not until friends brought us here. I could highly recommend this place if you wanted to discover delectable Thai cuisines in a very affordable price. It’s one of the kid-friendly restaurants here in the city that provides a specific play area of facility for children. They even have the sign “Aliens crossing” with the photo of children running. I find it amusing..he..he…
I easily felt in love with restaurants with a “home” setting…
this area is available for reservations if you plan to bring your family and friends for a special dinner
Methinks, this restaurant is perfect for my family-our parents plus my 13 other siblings:)
On the other hand, if given a chance to study online, I would love to give Online Master’s Degree in Education a shot to take me to the next level
